Apple Cake

Betty and Forrest Heiatt were close dear friends
Betty gave this to my mother years ago
and it’s been a family favorite for over 70 years
 

4 c    apples, coarsly chopped
2 c sugar                            

  ---mix apples and sugar together and let stand 1-2 hours)


2 eggs
1/2 c oil 

2 t    vanilla

2 C   sifted flour  (OK, we don't really "need" to sift it these days)
1 c nuts, chopped (toasted walnuts work just fine)
1 c raisins 
2 t baking soda                         ( combine the dry ingredients with the raisins,
 2 t cinnamon                        nuts and orange rind before adding the eggs vanilla and oil.) 
1 t nutmeg

1 t grated orange rind
1 t salt

 

Pre-heat oven to 350º

Mix all together in the usual way, after apples and sugar have been standing for 1 – 2 hours. Bake in a greased & floured pan at 350º until done. Approximately 1 hour.

NEW INSTRUCTIONS
Combine apples and sugar and set aside for 1 or 2 hours
Mix together the eggs, oil and vanilla. Set aside.
Combine dry ingredients.
Add egg and apple mixtures to the mixed dry ingredients and mix well
   Then

Bake in a greased & floured bunt pan at 350º until done. Approximately 1 hour.
