Peanut Brittle in the Microwave

So easy and so good.

1 C Sugar

1 C peanuts, roasted & salted

½ C white corn syrup (Karo)

1 tsp. butter

1 tsp. vanilla extract

1 tsp. baking soda

 

Lightly grease or butter a cookie sheet and set aside. Or use a non-stick cookie sheet.

In a 1 ½ qt. casserole stir together syrup and sugar and microwave on high for 4 minutes.

Stir in peanuts and microwave another 4 minutes.

Blend in butter and vanilla and microwave an additional 2 minutes.

Add baking soda and stir gently until entire mixture is light and foamy.

Pour mixture into the cookie sheet and spread and smooth out with the back of a large spoon.

Let cool ½ to 1 hour. When cool break into small pieces and store in an airtight container.

Make note of flavor and next time add more or less vanilla, if desired.

If raw peanuts are used, add, before microwaving, to the syrup and sugar mixture along with 1/8 tsp. of salt. Microwave 4 minutes, stir and microwave an additional 4 minutes.
