Banana Nut Bread

3               ripe bananas, mashed    

2/3  C       sugar

1/3   C      butter, room temperature.

1 t             banana extract

3               eggs                

1/2 C        walnuts, finely chopped and toasted    (optional)    

2 t             baking powder        

1/4 t          baking soda

1 3/4 C     flour

½ t            salt


        Preheat oven to 350º.    

        Combine flour, salt,  soda and powder, mix well and set aside.

                Mash the three bananas and set aside.

    Using a mixer, cream butter and sugar. Add eggs and extract followed
    by the bananas and then the dry ingredients.  Fold in the nuts.


    Place in a greased and floured loaf pan and bake for 1 hour or
     until a toothpick comes out clean.

    Cool, in pan, on a rack for 15 minutes.  Turn out and continue cooling.
